Wayfair’s Simply Summer cookbook

Exciting news, I am in my first cookbook a summer cookbook. Do you remember the cookbooks that schools and churches used to put together as a fundraiser? You know all the Bettys and Marys gave their recipes for pies and casseroles and some sweet soul typed them, on a typewriter, had them bound and sold them to raise money for the new playground. I might have just dated myself, especially with the typewriter comment. Regardless this cookbook is kind of like that except it is free!

Wayfair contacted all the Wayfair Homemakers, their community of bloggers, a few months ago and asked for summer recipe submissions. I imagine they got quite a few. They pulled together their favorites and made a beautiful cookbook for you all. Not only did they curate the recipes they cooked and photographed all of them as well! I find doing one recipe in a day exhausting sometimes so the fact that they cooked and photographed the entire cookbook in 48 hours is a super-human feat in my opinion.

I have two recipes in the cookbook. A strawberry rhubarb crisp and a grilled fish with watermelon salsa. They are two of our favorites for the summer.

You can make the fish as a stand-alone entrée or you can make a burrito bowl, by serving it over rice. Either way, it is a delicious summer meal. If you don’t like watermelon try it with the Mango Salsa from Kristin at It’s Kristin or the Pineapple Jalapeno Salsa from Kristin at Modish and Main. I guess Kristins have a thing for fruit salsa! The rhubarb crisp is truly one of my favorites. This is actually a perfect time to make it with the strawberries at their peak.
While I am excited about my recipes there are over 50 other recipes to choose from and I guarantee that the options and the photos will have your mouth-watering and ready for a weekend bbq. If I was making a menu just from this cookbook, which is easy to do, I would be serving:
